Winter Munchies

Just a fun idea, post your favourite (simple) winter recipe. Gorgonzola Breakfast Risotta w/ Poached Egg, Baby Spinach & Wild Mushroom salad Cooking time: 30 to 40 mins (inc prep) 1 serving Baby Spinach (or Asparagus)Wild MushroomsParsleyEgg 1 handfull risotto riceMilkOlive OilChicken Stock (pref home made)GorgonzolaWhite WineBrown (or spring for freshness) OnionsGarlicLemon JuiceParmesan Method1. Heat up oil in the pan, add chopped onion, garlic. Wait for onion to reduce then season with salt & pepper.2. Add 1 big handful of risotto rice. Pour White Wine and Stock into Pan. You want to cover the risotto rice with the liquid, allow the liquid to simmer down before adding more liquid. Repeat step until Risotto is almost cooked. Add milk, lemon juice and gorgonzola towards the end. Crack an egg ontop of Risotto, close lid to pan, turn off heat - allow the egg to cook and rice to finish. Ensure egg is runny in the inside and has a nice shape.3. Using butter cook the wild mushrooms in a small pot. Add salt, pepper, parsley. 4. Place Baby spinach with wild mushrooms. Cook for 5 seconds. Add balsamic vinegar & shaved parmesen. 5. Place baby spinach and wild mushrooms on top of risotto. Place poached on top of the baby spinach and season. Note: Need to have a good idea of what you want the dish to taste like. Every time you add liquid to the risotto you have the opportunity to recreate the flavour. I start with a chicken/wine tasting broth than start adding the creamy elements. Keep the risotto fresh, let the lemon and cracked pepper pierce through the cheese/creamy flavour.

    300g bag of Quorn mince, tin of crushed tomatoes, tin of kidney beans. a finely chopped onion, 1 sachet tomato paste, teaspoon of crushed garlic, 2 teaspoons of hot chilli powder, 1 heaped tblspn cumin, 2 bay leaves, salt. Fry off the onion, add the chilli and cumin til the onion is coated, fire in the toms, paste, beans, salt (to taste) and garlic, stick in the bay leaves and simmer for 10 mins. Add the Quorn mince and simmer for another 20 mins. Add more liquid if desired. I llke it very hot so I add a few small red chillies. Serve with rice, nachos and some sour cream with a chopped spring onion added. Oh, and a nice bottle of Spanish Rioja

    I really should go back to work soon...I don't eat so much for pleasure then. But...in the chilly, Perth winters...I don't mind putting my feet up with a bowl of roasted macadamia's and a bottle( just one )of Imperial Stout. A good strong one as it's the french champagne of beer. And those buttery nuts... Bliss. However...I'm in pleasant, Cairns' winter right now...and I did a slow roasted lamb shoulder yesterday. After 3 hours the meat was falling off the bone. Served with roast vege's, beans, asparagus and a gravy made from the braising stock. Noice... Good food needs lots of love.

    cook off some scallops with some onion and spinachMake a mild or hot creamy curry saucefill small ceramic bowels, with mixturetop with breadcrumbs and put until griller to the breadcrumbs are toasty brown and crunchy. Mouthfulls are a breadcrumb crunch followed immediately by the creamy curry scallops

A foodie get together where people bring the comfort food that THEY like to eat. As opposed to what they hope the other guests will like. Tastes in food are fascinating too.I'd be rocking up with a bottle of quality beer, some good beef jerky and a big bowl of macadamia nuts...

    Surely you could drum up a few body slaves...eunuchs perhaps?...to carry your pavilion into the banquet. Though...served like that, you might end up as the main course : )
